The Catalans beat the current holders, who have won the trophy twice.
Alejandro Marques hit two and Abel Ruiz grabbed one late on to seal the victory.
Marques headed home in the first half after being set up by Ruiz at the end of a good team move and then tucked in the second goal to send Barcelona on their way.
Chelsea hit the woodwork with efforts from Callum Hudson Odoi and Charlie Brown.
Barcelona have now won the trophy twice as well, with Red Bull Salzburg also lifting the cup, which has been running for five years.
